The restaurant cannot hold its name everywhere
The same trattoria is @amoremio on one network, @amore.mio on another, @amoremio_trattoria on a third — and on the fourth, somebody else got there first.

The diner belongs to the platform
An order or a booking through a platform comes with the platform's terms and its commission, and the regular it brought stays largely on its side. When its ranking changes, the restaurant's visibility changes with it.

Anyone can pose as the restaurant
Fake pages post the wrong hours, the wrong menu or a fake offer under a restaurant's name. Verification is sold, revoked and redefined, so the badge that answered it is now a subscription.

The restaurant has no address of its own
What it has is a map pin, a delivery listing, a booking page and a handful of profiles, each with its own menu and its own hours — and none of them on a domain it controls.
